Squash Recipes

Thanks to Laura, who gave us some yummy squash recipes today. I was really stuck because I have eaten squash pretty much one way and was tired of it. And 2/3 of my kids won’t touch the stuff. So I am looking forward in particular to trying the Kid-Friendly Squash.

Laura grew up in Eastern Washington and her backyard was a veritable squash farm! Here are a couple of her mom’s recipes:

Stuffed Zucchini

Ingredients:

  • 1 heel bread
  • 2 small or 1 large zucchini, slightly cooked, sliced in half lengthwise
  • 1 egg
  • Onion to taste
  • Salt, pepper to taste
  • Garlic power to taste
  • Parmesan cheese

In blender or food processor, chop bread into crumbs. Remove from blender. Add to blender: cooked insides of zucchini (save shells), egg, onion, salt, pepper, and garlic power. Blend. Mix in crumbs. Spoon mixture into shells. Sprinkle parmesan cheese over the top. Bake at 350 for 30-45 minutes or until brown.

Kid-Friendly Summer Squash

Cube desired amount of scallop squash or yellow squash and place in microwave-safe buttered pan. Cook in microwave until tender-crisp. While squash is cooking, make cheese sauce.

Cheese sauce:

  • 2 T margarine
  • 2 T flour
  • 1 cup milk
  • Salt
  • Pepper
  • ¾ cup grated cheddar cheese

Make a thin paste with flour and a little milk. When all lumps are out, add remaining milk and margarine and heat in double boiler 5-8 minutes, stirring constantly, until thick and smooth, or heat in microwave for 3 minutes. Stir in salt, pepper, and grated cheese.

Pour cheese sauce over tender, cooked squash. Sliced boiled egg on top.
