Meghan’s Super Amazing Orange Tomato Carrot Soup

Warm up on chilly days with Meghan's fresh tomato soup spiced with ginger

Meghan Fuller is a landscape designer and maintenance manager with Rock Solid Landscapes in Seattle. Many of you may know her from the popular seminars that she teaches at Swansons Nursery.  Meghan will be speaking at the show on “The Details Make the Difference: Plant Marriages That Don’t End in Divorce,” on Friday, February 25 at 6:30 pm and she’s also giving The Dirt on Dirt: How to Improve Your Soil & Garden’s Health,” on Sunday, February 27 at 5:00 pm. Meghan’s recipe serves 6, and is super flavorful and super delicious!

INGREDIENTS
3 Tbsp olive oil
1 onion, chopped
5 carrots, sliced
1 large tomato, chopped
2 red and/or yellow peppers
A few inches of fresh ginger, grated
1 can Muir Glen fire-roasted diced tomatoes (or any diced tomatoes, but these are awesome)
3 Cups orange juice
1-1/2 Tbsp paprika
1-1/2 Tbsp cider vinegar
salt & pepper to taste

 INSTRUCTIONS

1. Heat the olive oil in a pan. Fry the onions and carrots until the onions are soft.

2. Add the tomato, peppers, and ginger, and heat for a few minutes to soften.

3. Stir in the remaining ingredients, then transfer to a blender or food processor and mix until smooth. Return the soup to a pan and heat gently for 5-10 minutes until hot.

4. Enjoy with some warm whole wheat bread and/or a salad for a tasty, healthy meal!
