Janit’s Quick Pasta Sauce

Tomatoes, garlic and basil make up this easy recipe from Janit Calvo

Janit Calvo is an artist, a lifelong gardening enthusiast, and an entrepreneur with a joie de vivre that makes just about anything come to life. As a passionate creator Janit has “shrunk” the world of gardening with Two Green Thumbs Miniature Garden Center, a company she formed in 2004.

Here Janit shares a low-calorie (full sized) alternative to a cream sauce that is yummy all by itself, or great to use as a base for other recipes. Used infused olive oil for the second step if desired. Throw a hot pepper in before baking for a bit of a fiery twist. You’ll have a fresh, easy-to-make pasta sauce for use with any kind of pasta.

PLACE:
– 10 cloves of garlic
– 25 cherry tomatoes
– about two splashes of olive oil
in a covered baking dish in the oven for 40 minutes at 375 degrees.

Cool it down a bit before you transfer it to a food processor and add:
– 1 cup fresh basil
– ¼ cup parmesan cheese
– ¼ olive oil
and blend until smooth. Toss with pasta of your choice for a delicious meal.
